Within universe it's because Thanos with all the stones is all seeing, all knowing, all powerful and immortal. More interesting is the outside Universe question of why this is so? Endgame and Infinity War are two parts of a single story - and at the same time vastly different films. Endgame does not want to and isn't trying to repeat Infinity War. Infinity War is an action thriller where the villain is the protagonist. Endgame is a character study - that concludes character arcs for 6 different heroes. When you understand this, the particular events that - do - and do not - make up the story of Endgame becomes clear. For example Thanos is killed at the beginning of Endgame - and the context of this - is that he has won, completed his mission and died. (death being a key goal) At this point - the film is no longer about Thanos. It's now about the heroes. How do they cope with defeat. Who and what are they once their super powers can't save them? And this is one of the narrative reasons why the goal of the Avengers is not to go back in time to fight Thanos again. That would make the film Avengers vs. Thanos - round II. It would be more of the same. But this is not more of the same. Thanos being gone allows the film to be about the Avengers. Inside the Universe of the film - the reason for this mirrors the filmmakers objective. When the Avengers do pull themselves together - their goal is to bring back those who were murdered - but it is not to fight Thanos again. Of course this happens anyway as a result of the hubris of their goal (to conquer death. but this is despite their attempting to avoid it. Remember this, next time a fan fiction is created for how the Avengers could go back in time with the aim being to beat Thanos. That expectation is intentionally disrupted by the film, for good reason.
